Chicken adobo made from chicken thighsIngredients
- Chicken:
- 4 chicken thighs (bone in, with skin)
- Sauce:
- 20 cloves of garlic (minced)
- 1 tbsp of black peppercorns (ground)
- crack of fresh ground black pepper
- 3 tbsp of brown sugar
- 1¼ cup of rice vinegar
- ½ cup of soy sauce
- ¼ cup of dark soy sauce
- ½ cup of water
Instructions
- Mix all the ingredients in the sauce to form the marinade. Add chicken and marinate for 2 hours.
- In dutch oven on medium-high heat, add a bit of vegetable oil. Sear chicken 2-3 minutes per side.
- Pour in marinade uesd in Step 1, bring to simmer.
- Cover and let simmer for 35 minutes.
- Flip chicken, cover, and simmer for another 25 minutes.
- Serve on rice.
