Chicken adobo made from chicken thighs

Ingredients

  • Chicken:
    • 4 chicken thighs (bone in, with skin)
  • Sauce:
    • 20 cloves of garlic (minced)
    • 1 tbsp of black peppercorns (ground)
    • crack of fresh ground black pepper
    • 3 tbsp of brown sugar
    • 1¼ cup of rice vinegar
    • ½ cup of soy sauce
    • ¼ cup of dark soy sauce
    • ½ cup of water

Instructions

  1. Mix all the ingredients in the sauce to form the marinade. Add chicken and marinate for 2 hours.
  2. In dutch oven on medium-high heat, add a bit of vegetable oil. Sear chicken 2-3 minutes per side.
  3. Pour in marinade uesd in Step 1, bring to simmer.
  4. Cover and let simmer for 35 minutes.
  5. Flip chicken, cover, and simmer for another 25 minutes.
  6. Serve on rice.
