Japanese Wafu Pasta

Ingredients

  • 1 lb spaghetti (dry)
  • ¼ cup extra-virgin olive oil
  • 8 Tbsp unsalted butter
  • 4 cloves of garlic
  • ¼ tsp salt
  • 15 cranks of fresh cracked black pepper
  • 1 lb shiitake mushrooms
  • ¼ cup soy sauce
  • 2 scallions (garnish)

Instructions:

  1. Boil pasta for recommended time, set aside when done, reserving at least ½ cup of pasta water.
  2. In skillet on medium heat add olive oil with 4 Tbsp of butter.
  3. Once butter melts, add garlic and mushrooms.
  4. Once garlic browns, add salt and pepper.
  5. Push mushrooms to one side of the skillet.
  6. Set skillet to med-low, add remaining butter and soy sauce to skillet.
  7. Once butter melts, add mushrooms back to mix.
  8. Add pasta and ½ cup pasta water, toss until pasta is glossy.
  9. Serve immediately.
