Hidden Veggie Tomato Soup

Ingredients

  • 3 Cloves Garlic, Sliced.
  • 1 Onion, Chopped.
  • 1 Red Chilli, Deseeded, Sliced.
  • 1 Red Capsicum, Chopped.
  • 1 Zucchini, Chopped.
  • 2 Carrrots, Chopped.
  • 1 Celery Stalk, Sliced.
  • Handful of Spinach.
  • 1Kg Tomatoes, Chopped.
  • Fresh Basil, Parsley, to taste.
  • 1Tsp Mixed Herbs.
  • 1Tbsp Tomato Paste.
  • 2Tsp Salt, Pepper.
  • 2Tbsp Sugar.
  • 1Tsp of Olive Oil.
  • 500ml Vegetable Stock/Broth

Instructions

  1. In a large enough pan, fry the Onion and Garlic until translucent.
  2. Add in all ingredients, with Vegetable Broth, ensuring that you regularly check and stir the concoction.
  3. Bring mixture to a boil, remain here for 20 minutes, then reducing the heat to a simmeer.
  4. Remain simmering until all vegetables are soft.
  5. Allow a moment to cool off slightly, prior to blitzing with a Stick Blender, or conventional Blender.
  6. Serve as is, or optionaly add a dollop of cream, to enhance consistency, or neutralize flavours!
